Stuffed Brinjal Maharashtriyan  style

Ingredients (3-4 servings)


250 gms baby brinjals

1/4 cup peanuts

1/2 cup dry coconut (grated)

4-5 cloves garlic

1 large onion, chopped

1/2 tsp turmeric powder

1/4 tsp red chili powder

1/4 tsp garam masala powder

1/2 tsp coriander powder

1/4 tsp cumin seeds powder

1/4 tsp cumin seeds

2 tbsp oil

2 tsp tamarind pulp

2 cups water

Salt to taste


Method (How to make stuffed brinjals)

Wash the brinjals, slit them without breaking them and soak in the water.

Now heat a pan and roast the peanuts first, and after that roast grated coconut separately till it become light brown and smell fragrant. and keep aside.

Now heat 1 tbsp oil in a pan and saute onion and garlic till soft. and keep aside for cool down.

When the coconut, peanuts and onion garlic cool down, grind them as a fine paste with some water but not to make too liquid.

Now add all dry masala powder  into the paste and mix well.  

Add salt and tamarind pulp now stuffing is ready.

Now fill all baigan with this stuffing  properly and keep aside.

Heat oil in the pan add cumin seed and stuffed baigan put half cup water and close the lid and cook on medium flame for 30-35 minuts.

Keep checking in between and if the stuffed brinjals looks dry add some more water and cook till soft.

Garnish with coriander leaves serve hot with chapati or paratha
