Bengali Baigan Bhaja - Fry Brinjals
Ingredients

  • 4-5 Medium Size Brinjals
  • 2 tsp Turmeric Powder (haldi)
  • 1 tsp salt
  • 1/2  Red Chilli Ppowder(4)
  • Mustard oil for frying


Method

  • Wash and cut the brinjals in round pieces. 
  • Apply salt chilly powder and turmeric powder over it and keep it aside for  1 hour.
  • Now heat oil in wok  Fry the the brinjals peices on medium flame until they get soft.
  • Now take off from the pan and place the peices on paper towel to absorb the extra oil.
  • Baigan bhaja is ready.
  • Serve hot with khichdi or rice.
