Wood apple juice -Bel ka Sharbat

Ingredients
·        1 medium size bel  (Wood apple)
·        ½ cup sugar
·        3-4 cup chilled water
·        1 Lemon (optional)

 Method (How to make Bel ka Sharbat)
·        Remove all pulp from the bel and soak in the water for atleast 1 hr.
·        After that smash it well with your hands until the pulp gets properly dissolved in the water. (seperate the seeds and threds from the pulp)
·        Filter the mixture with juice filter properly.
·        Add sugar and mix well till sugar dissolve, add ice cubes to it.
·        Serve chilled Bel sharbat in glasses.
(you can add few drops of lemon juice also for taste)

Cheezy Pasta

Cheezy Pasta
Ingredients (for 2 servings)

·        2 cups boiled pasta (penne)
·        1 cup boiled vegetables (carrot, beans, cauliflower)
·        1/2 cup capsicum, sliced
·        1/2 cup milk
·        3-4 cheese cubes or slice (grated)
·        1 1/2 tsp butter
·        salt to taste
·        1/4 tsp black pepper powder


Method (How to make pasta for kids)
·        Heat the butter in a pan and saute the capsicum.
·        Add the milk and grated cheese cubes and bring to a boil.
·        Add the boiled vegetables, and boiled pasta.
·        Add salt and pepper and mix well.
·        Cook pasta till boiling start.
·         Remove from the heat serve hot

Hakka Noodles

Hakka Noodles
Ingredients (for 3-4 servings)

Ø 1 packet Hakka Noodles
Ø 4-5 spring onions, chopped
Ø 1 cup cabbage, shredded
Ø 1/4 cup beans chopped
Ø 1 cup thinly sliced multi colored capsicum (red, green, yellow)
Ø 1 medium carrot, chopped
Ø 2-3 garlic, finely minced
Ø 2 tbsp soy sauce
Ø 1 tsp vinegar
Ø 1 tbsp chilli sauce, as per taste (optional)
Ø 1/2 tsp pepper
Ø Oil 4 tbsp
Ø salt to taste

Method
Ø Boil (1 1/2 litre) water in a big pan, when water start boiling add, 2 spoon oil, salt and hakka noodles.
Ø  When noodles cooked around 85-90%, remove from the heat and drain the water and wash with cold water.
Ø Drain it completely and keep aside.
Ø Now heat 2 tbsp oil in a wok until it smokes.
Ø Add the garlic, onion and saute few sec. now add capsicum, cabbage, carrots and beans.
Ø Stir continusely on high flame for 2 minutes.
Ø When vegetables start softening slightly, add the noodles, soya sauce, vinegar, salt, pepper, chilli sauce and mix well.
Ø Saute for another 2 mints and remove from the heat.
Ø Serve hot  immediately with tomato ketcup.

Paneer Capsicum


Paneer Capsicum

Ingredients (for 2 servings)

·        1 cup Paneer (100 gram)
·        1 Tomato, (long sliced)
·        1 Large Capsicum (long sliced)
·        1 Onion (long sliced)
·        ¼  tsp Cumin seeds (jeera)
·        1 tsp ginger-garlic paste
·        ¼ tsp Turmeric pwd
·        1/2 tsp Red chilli pwd
·        1/2 tsp Coriander pwd
·        1 tblsp Kasuri methi
·        1 tsp Garam masala pwd
·        salt to taste
·        2 tblsp Vegetable/Olive oil
·        chopped Coriander for garnish

Directions
·        Heat Oil in a pan add Cumin seeds. When the seeds are light brown, add Onion & Capsicum. Fry for a min & add Ginger-garlic paste & fry  well for few secs.
·        Add Tomato and fry few min. Add Turmeric pwd, Coriander pwd, Red chilli pwd, & Salt.  Mix well & close the lid, cook till the Capsicum and tomatoes are soft.
·        Add mash  Paneer Stir well for 3-4 mins. Add kasuri methi & garam masala mix gently.
·        Garnish with chopped Coriander & serve hot with chapati, roti, etc.

Sweet Potato Halwa



Ingredients (for 4 people)

  • 4 medium sized boiled sweet potato
  • 2 tbsp coconut powder
  • ½ cup Ghee
  • ½ cup sugar
  • 2 small cardamom powder
  • 2 tablespoons chopped almonds and pistachios


Method
  • Peel and mash sweet potato well.
  • Put the ghee in a nonstick pan to heat and put the sweet potato and stir continuously over low flame until it become pink.
  • Mix sugar, cardamom powder and coconut powder, stir until it become dry.
  • Decorate with chopped almonds and pistachios and served.
