Mithi Mathri For Teej

Ingredients
  • 2 cup maida
  • 5 tbsp melted ghee
  • 2 cup Sugar 
  • Ghee or oil for frying
Method (How to make sweet mathri for teej festival)
  • Sift the flour in big mixing bowl.
  • Add ghee into the flour and mix with hand.
  • Add water and knead stiff dough. Cover the wet cloth and keep aside for 20 minutes.
  • Heat one cup water in a pan and add 2 cup sugar heat till sugar dissolve completely.
  • Make sugar syrup 2 thread consistency.
  • Heat ghee or oil in a pan.
  • Make small lemon size ball with the dough and roll small puri.
  • Poke with fork and keep aside.
  • Make all mathri and poke with fork and keep aside.
  • Fry in heated oil till crispy and light brown on low flame.
  • Fry all mathri in same manner.
  • Now put one mathri in the sugar syrup and keep in plate. Make all mathri with sugar as same manner.
  • Once the mathris have cooled, and sugar syrup become dry.  Serve or store in an airtight container.

Whole Wheat Honey Banana Loaf
 

Ingredients
  • 1 cup Whole wheat Flour
  • 2 small ripe Bananas
  • ¼ cup Honey or brown sugar
  •  ¼ cup vegetable Oil
  • 2 tbsp chopped walnuts
  • ½ tsp baking powder
  • ¼ tsp baking soda 
  • ¼ tsp cinnamon powder
  • A pinch of Salt
Method (How to make banana honey loaf with whole wheat flour)
  • Peel bananas and put them in a bowl mash the bananas using a fork or blender till smooth paste.
  • Add honey and vegetable oil into the banana and mix well, if you are using sugar mix till sugar dissolve fully.
  • Sift whole wheat flour, with baking powder, baking soda, cinnamon powder and salt together. Do this two times to make the dry ingredients remove any lumps.
  • Add the dry ingredients into the wet ingredients and fold it very well with spatula.
  • Add some half of the walnuts and mix.
  • Pour the batter in a greased or butter paper lined loaf pan.
  • Sprinkle remaining walnuts on top of the batter
  • Bake this in a 180 degrees preheated oven for about 20-25 minutes or till an inserted toothpick comes out clean
  • Let it cool down on wire rack to room temperature before you cut it into slices.

Maxican Paratha

Maxican Paratha

Ingredients (for 6-7 parathas)
  • 1 ½ cup wheat flour        
  • ½ Rajma (soaked overnight)     
  • 4 Olives   (optional)     
  • ½ cup Grated Cheese          
  • ¼ tsp Cumin seeds        
  • 1 Green chili (finely chopped)     
  • ½ tsp Garlic paste     
  • 1 medium size onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • Salt as per taste    
  • ½ tsp red chilli powder  
  • ¼  tsp oregano flakes   
  • ¼ cup Oil 
Method (How to make maxican paratha at home)
  • Pressure cook soaked rajma till soft and mashy. Drain the water and keep it aside.
  • In a wide bowl add whole wheat flour and salt add water and knead a pliable dough. Apply few drops of oil and cover it and keep aside.
  • Remove the tomato seeds and chop them finely.
  • Heat 2 tsp oil in pan add garlic paste and sauté for few seconds, add chopped onions and green chilli saute till onion turn golden brown.
  • Add chopped olives and sauté, add in the chopped tomatoes and cook for few minutes.
  • Add red chilli powder, oregano and cooked beans and chopped olive.
  • Add boiled beans, salt, red chilli powder, oregano and mash well with potato masher.
  • Cook it well till the moisture in the mixture evaporates.
  • Allow this to completely cool down.
  • Add grated cheese into the mixture.
  • Mix well and make equal 6-7 parts.
  • Make the dough also into equal 6-7 slightly big lemon sized balls. 
  • Dust some dry flour and gently roll this into thick medium sized paratha.
  • Heat a griddle and place the rolled parathas on heated griddle.
  • Cook from one side and flip to other side place one part of filling and roll the paratha as roll,  and apply some oil and cook till crispy and light brown. Cover the roll with paper napkin.
  • Repeat the same for the rest of the dough and filling.
  • Serve hot with tomato salsa or avocado dip.

Spicy Potato Cutlets


Ingredients (12-15 cutlets)
  • 4 medium boiled Potatoes
  • 1 tsp ginger garlic paste
  • 1 green chilli (finely chopped)
  • 1 large Onion (finely chopped)
  • ½ tsp Red chilli powder
  • ½ tsp fennel seeds powder
  • ½ tsp Garam masala
  • 1 tbsp Sesame seeds (slightly roasted)
  • 1 tbsp Corn flour
  • 2 tbsp Bread crumbs
  • Oil for frying
  • Salt to taste
  • 1 tbsp coriander leaves (chopped)
Method (How to make spicy potato cutlets at home)
  • Mashed the boiled potatoes and keep aside.
  • Heat oil in a wok add ginger garlic paste and sauté few seconds, add chopped onions and green chilli and sauté till light brown.
  • Add all dry spices(chilli powder, garam masala, and fennel seeds powder) and mix well.
  • Add salt and sesame seeds and give a nice stir.
  • Switch off the flame.
  • Mix this mixture into the mashed potato, add coriander leaves  and mix well.
  • Make 10-12 part with the mixture and shape them as cutlets shape of your choice.
  • Add 2 tbsp water in the corn flour and make thin batter.
  • Place bread crumps in a plate.
  • Dip one cutlet in corn flour mixture and then roll over the bread crumps and keep aside.
  • Heat oil in a wok and fry all cutlets till brown and crispy.

Whole Wheat Pizza Paratha


Ingredients (for 2 servings)
for outer part
  • 1 cup whole wheat flour
  • ¼ tsp salt
  • ½ tsp sugar
  • ½ tsp baking powder
  • ¼ cup warm water
For stuffing
  • 2 tbsp pizza sauce or tomato sauce
  • Salt as per taste
  • ½ tsp chili flakes
  • 1tsp dry oregano
  • ½ cup capsicum finely chopped
  • ½ cup paneer (grated)
  •  ½ cup mushrooms finely chopped
  • ¼ cup onion finely chopped, adjust to taste
  • 1 cup mozzarella cheese grated
Other ingredients
  • ¼ cup wheat flour for rolling paratha
  • 2 tbsp oil for roasting paratha
Method (How to make pizza paratha with wheat flour)
  • Mix the flour, sugar, salt, baking powder, and oil, add the water as needed to make soft and pliable dough. Cover the dough and set aside for about one hour.
  • Use one cotton cloth to squeeze the chopped capsicum and mushroom to remove the extra water.
  • In a bowl capsicum, mushrooms, paneer, salt, chili flakes, oregano and cheese, mix it well.
  • Again knead the dough and divide in four equal parts.
  • Roll two part of the dough into about six-inch diameter, use dry flour as needed to roll.
  • Apply pizza sauce over the roti and place half a cup of filling in the center. Cover with the other rolled roti.
  • Heat the tawa on medium heat, put some oil on the tawa  generously, and place the paratha on the skillet. Cook the paratha for 2-3 minutes and flip the paratha. Paratha should be golden brown. It is important to cook paratha on low heat.
  • Apply some oil on both side of the paratha and flip it again in about 2 minutes. Paratha should be golden brown both sides for crispness. Paratha should take about five minutes to cook nicely.
  • Pizza paratha is ready, serve hot with tomato sauce.

Ingredients
  • 1 ½ cup all purpose flour (Maida)
  • 1 cup sugar
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ strawberry essence
  • ¼ cup water
  • ½ cup oil
  • ¾ cup butter milk
  • 2/3 cup strawberry crush or (1/2 cup chopped fresh strawberry)
Method(how to make strawberry cup cakes at home)
  • Add sugar, oil and butter milk in a mixing bowl and mix well, add essence and water and keep it aside to dissolve the sugar.
  • Pre heat oven to 180 degree C
  • Mix  maida, baking powder, baking soda, and salt and sift to remove all lumps.
  • Mix the dry ingredient into the wet ingredients and mix well, do not over mix the batter.
  • Add strawberry crush or chopped strawberry and mix well.
  • Place the cup cake liner into the muffin trey.
  • Spoon the batter to the cupcake liners and bake them in a preheated oven for 15-18 minutes or till toothpick inserted comes out clean.
(you can use  any fruit of your choice to make fruits cupcake like pineapple, apples, kiwi or even nutella)

Bombay Halwa – Karanchi Halwa
Ingredients
  • 1 cup corn flour
  • 2 cup sugar
  • ¼ cup ghee
  • 1 cup chopped dry fruits (cashew, almonds, pistachios)
  • Pinch of red colour
  • ¼ tsp citric acid (lemon salt)
  • ½ tsp cardamom powder
  • 3 cup water
Method  (How to make bombay karachi halwa at home easy method)
  • Take sugar in a non stick par or any heavy bottom pan and add sugar and 2 cups of water. Mix well and heat till the sugar is melted.
  • While sugar is melting, take cornflour in a bowl and add in 1 cup of water and mix well so no lumps are formed.
  • When sugar melt completely in pan, switch stove to low flame and pour the corn flour mix in and mix well.
  • And stirring continuously from the bottom of the pan on low flame till it is thick, glossy and jelly like. (it will take around 15-20 minutes)
  • Now add citric acid and 2 tbsp of ghee and keep mixing till mixture absorb all the ghee.
  • Add food colour and more ghee and mix well. Use all the ghee in 3-4 shifts.
  • Now it will get thick and non sticky.
  • At one stage the halwa will leave the sides of the pan. (if pan is non-stick mixture is not stick on the pan) at that point add chopped cashews, almonds, pistachios and cardamom powder and mix well.
  • After adding ghee cook around 12-15 minutes.
  • The halwa will look non sticky, it will leave the pan, it will be thick and glossy, and the ghee will ooze from the sides of the pan.
  • At this oint pour this into a square pan and set it in fridge for 1 to 2 hours.
Once it is set, invert it to a cutting board and cut it into slices. And serve.
