Baby Corn Curry



Baby Corn Curry
Ingredients (3-4 servings)
12-15 Baby Corn
1 large onion ( chopped)
1 small onion (cut in a cubes)
1 small Capsicum  (cut in a cubes)
2 large tomato (chopped)
1 green chilli
5-6 cashew nuts (soaked)
1/2 tsp chilli powder
1/4 tsp cumin powder
1/4 tsp garam masala
1/2 tsp crushed kasoori methi
1/4 tsp cumin seeds
1/2 tsp coriander powder
1/2 tsp tomato sauce
1/2 cup fresh milk
1 tbls fresh cream for garnishing
1 pinch turmeric powder
Salt as per taste
1 1/2 tbls oil

Methods (How to make baby corn curry)
Wash the Baby corn and cut them into 1/2” big pieces .
Heat  1/2 tbls oil in a  pan add chopped onions and saute them till it turns into a nice brown colur and remove from the pan.
Now in the same pan cook the baby corn with 1/2 water salt and turmeric and cook till it becomes soft. Remove the excess water and keep aside.
Now make paste with sauted onion, green chilli, tomato, red chilli powder, coriander powder, cumin seed powder, tomato sauce, kasoori methi, cashew nuts into a smooth paste.
Now heat remaining oil in a kadai saute the capsicum and cubed onion for a minute.
Keep it aside.
In the same oil add cumin seeds and add the ground masala.
Saute them in a low flame for 5 mins.
Add the cooked Baby corns and half cup of milk to the gravy.
Now add the capsicum and onions to this and cook 3-4 minuts.
Put off the flame, Garnish with fresh cream.
Serve it hot with Roti or Naan.
