Mix Veg Palak
Ingredients (3-4 servings)
- 2 cup spinach (boiled)
- ½ cup carrot (finely chopped)
- ¼ cup beans (finely chopped)
- 1 cup cauliflower (chopped)
- 3 green chillies
- ½ cup onion (finely chopped)
- 1 tsp ginger (chopped)
- 1 tsp garlic (chopped)
- 1 cup tomato (chopped)
- ½ tsp cumin
- 1 tsp red chilli powder
- 2 tsp garam masala
- 2 tbsp oil
- Salt as per taste
- 1 inch cinnamon
- 2 tbsp coriander leaves
Method (How to make mix veg palak)
- Make paste of boiled spinach and one green chilli.
- Slit remaining chilies.
- Half boiled cauliflower, beans and carrot.
- Heat 1 tbsp oil in a pan and add cinnamon and ginger and garlic sauté for few seconds.
- Add chopped onion and fry till light brown.
- Add spinach paste and sauté for 2-3 minutes. Switch off the flame
- Heat remaining oil in a pan add cumin seeds sauté for few second, add tomato and salt fry till tomato mashed.
- Add boiled vegetables and sauté for 1-2 minutes.
- Add red chilli powder and garam masala.
- Add cooked palak paste and fresh cream.
- Add lemon juice switch off the flame and garnish with coriander leaves.
- Serve hot with roti or paratha.
