Yellow Saffron Rice
Ingredients (for 3-4 servings)
1 Cup basmati rice (soaked in water for 30 min.)

tsp Saffron strands or 1 pinch saffron colour
2 tbls ghee
2/3
Cup cold milk
3
Green Cardamom seeds
1
Inch stick cinnamon
5-6 tbsp Sugar
1/2 cup Chopped cashew and almonds
1/4 Cup small raisins
Method (How to make Sweet Saffron Rice)
Boil
the rice till 3/4 done drain the water and keep
aside.
Heat ghee in a heavy bottom pan fry and cashew, raisins
and almonds till golden. remove from the pan and keep aside.
Now add cinnamon stick, green cardamom seeds in pan and
add the
boiled rice in same pan, fry for 3 minutes.
Mix
cold milk and sugar and stir gently.
Cover
the pan with a lid and cook the rice over low heat until done.
Add
saffron milk or a pinch of saffron colour.
Add fried nuts and raisins and cover the pan on low heat for a minute.
Place
into a serving dish.
Sprinkle some nuts and
raisins over it and serve hot.
